Local franchisee Henry Lee begins construction on unique food hall concept in downtown Westminster

WESTMINSTER, Colo. (Aug. 22, 2025) — Construction has begun on a unique food hall concept located at Aspire announced by Sherman Associates, the City of Westminster, and local franchisee, Henry Lee. Red Lotus Den, an immersive culinary and entertainment destination, is set to open in summer 2026 at 5815 West 89th Avenue in Westminster.

Red Lotus Den is a next-generation eatery with seven restaurants offering a curated collection of chef-inspired dishes spanning Chinese, Japanese, Korean, Italian, and more. Unlike a traditional food hall, Red Lotus Den will offer full-service dining where guests can order from their seats and receive table service for both food and drinks. Red Lotus Den will serve as a full-night destination with an immersive atmosphere where you can go for both dinner and an experience.

“We’re not just creating a typical food hall—we’re crafting a dynamic social destination where exceptional food, service, and nightlife come together,” said Henry Lee, operator of Red Lotus Den. “Every detail, from the design to the guest experience, has been thoughtfully curated to exceed expectations.”

  Red Lotus Den will occupy two floors spanning 15,000 square feet with a central bar anchoring the first-floor space and karaoke and party rooms, a conference room, an office, and an additional bar on the second floor, creating a multi-functional space for both private events and group gatherings. The eatery will accommodate 675 guests, with additional outdoor patio seating for approximately 50 guests along Central Square Plaza.

Red Lotus Den is a key driver of the City of Westminster’s second phase of Downtown development, made possible through the public-private partnership with Sherman Associates. Designed to activate downtown and stimulate economic growth, Red Lotus Den will serve as a regional culinary destination, drawing visitors from across the metro area and helping attract future retail tenants to the area.

Lee is leading the way with downtown Westminster restaurants including Bonchon Korean Fried Chicken and Salady, both located at Sherman’s Ascent, one block south of Red Lotus Den. Lee purchased his first franchise of Bonchon in Denver in 2018 and now owns six locations across Colorado.
